SMALL SERIES FROM THE MANUFACTORY


What looks like a boring plastic frame is probably the most exciting part of the whole Phoenix and a great combination of state-of-the-art plastic technology & solid handwork:
Each frame weighs 5 kg and is hand poured into an open 30-piece mold, which is assembled and disassembled for each cast - creating 3 frames per hour in small-scale manual labor.
In the next step, each frame is matted with glass beads, oiled and polished by hand, before the serial license plate is glued in place and the anti-slip silicone rings are inserted on the underside in the final step.
All in all, it takes around 50 steps to complete a single frame.
However, we think it's worth it.

WHICH WOOD IS RIGHT FOR ME?

We have a clear recommendation: in our experience, personal taste is the only important parameter for a long-term positive product relationship, and thus the only question to answer is:
Which wood do you like best? Quite personally and quite deep inside?
(Falling in love is explicitly allowed).

From a purely technical point of view, all wood species in our range are suitable as cutting boards and differ only in the finest nuances of density & hardness - apart from bamboo, which is characterized by far above-average hardness and resistance, but of course does not look as lively as the other woods.

FUNCTIONAL ORNAMENTS

The centering wedges are additionally inserted into the frame and center the worktop on the frame.
The mechanism is simple: The centering wedges form the "positive", the worktops have the corresponding "negative" geometry. This is precisely milled - so that both parts interlock positively using a simple "tongue & groove" mechanism.
Despite the stable hold in this position, the support can be easily lifted upwards at any time - for cleaning or to turn the support around.
Each set of centering corners (4 pcs.) is precision milled from the solid in Offenbach and is packed separately.

So there are always enough containers at hand and you can start cooking directly.
This way, you quickly have your first flow experience working with the board - and that's important, because only with enough containers does working with the board become easy.

The relationship is obvious:
Like the big Phoenix, the PHOENIX-S leaves no questions unanswered regarding functionality: Turn-able worktops in various materials, tongue & groove bearing on a frame made of high-quality, hand-moulded plastic, integrated silicone rings on the underside for maximum stability and the proven display.
For those who don't have an infinite amount of space - but still want the best.

In its size class, the PHOENIX-S is just as much a superlative as its big brother: the same generous lines that effortlessly integrate functional details and put them into a larger context; the same well thought-out, sophisticated functionality and the same spacious self-confidence - the proportions of the PHOENIX-S are much more compact overall, which surprisingly is more beneficial to the aesthetic quality.

In everyday life you can easily cook for up to 4 people with the Phoenix-S - with a little logistical planning you can also create more extensive dishes for 6-10 people without any compromises.
However, if this number of people is common, we would rather recommend a large PHOENIX if there is enough space.

IN DETAIL: THE PHOENIX SERIES
While Basic and Mono still pass for regular cutting boards with a little good will, the Phoenix series differs fundamentally just by its two-part construction:

The entire "technology" - i.e. the brackets, centering joints and rubber feet - of the Phoenix is accommodated separately from the actual cutting surface in a frame made of solid, hand-cast polyurethane. The cutting board itself only sits on the base, precisely form-fit centered.

This design has significant advantages:

SEPARATION OF FLAVOURS & INGREDIENTS
The support can be easily rotated during cooking with one quick movement. This allows different flavours and foods to be easily separated from each other, e.g. chili & garlic or meat/fish from a vegetarian dish.

EASY CLEANING
The worktop can easily be removed and cleaned separately after and during cooking, while the entire base with the containers simply remains on the table.

MULTIPLE WORKTOPS
You can combine the Phoenix base with different worktops and thus structure the kitchen work even better, e.g. with your own worktop for meat or fish and a worktop for vegetables.

I hadn't counted on it before my holiday and yesterday afternoon I went shopping again... They developed a great idea. The quality and workmanship is very professional. I can only recommend the large M-container, which I ordered additionally for the garbage, to every customer. The workplace is always "tidy" and somehow the preparation is even more fun than before ;-) I am very satisfied!

My Phoenix Brett had the coolest use a few weeks ago on the occasion of a restaurant opening where I had the special task to run the Cocktail Bar. On the board I could cut limes, lemons, oranges etc.. This came then in GN containers together with cane sugar and what else is needed into the rear range, so that it could be got by tongs. In front you can put Caipi ram, spoon, knife etc.. The board was then again and again the working surface for preparing the cocktails, the additional height was helpful. In the bar area with a lot of movement, however, you cannot leave the GN hanging permanently in the front if it gets hectic. If I had had a locked area, it would have been TOPP. Was fun and was certainly an eye-catcher!

During the week I am actually always a bit sad when I use my board. Because then it is actually only used for everyday life. Onions, garlic, cucumber, paprika but also fruit. Nevertheless too little for the board. On weekends I like to take time for elaborate cooking. The board does justice to its function as a workbench. The Phoenix S fits perfectly on a kitchen cupboard of the dear Swedes and can be filled with containers from all 4 sides. That makes working so nice. Shelf, trash can, ingredients and accessories. Everything just where it belongs. Clearly from time to time something falls into the bins when the cuttings are being moved. But the organisation of cooking becomes much more relaxed. It simply makes more buck than without my board. After a drunken cut/cook weekend you can already see the board's use. Remedy creates there some oil. Apply thinly and wipe well and it looks like new. In terms of service and support, the two brothers are unbeatable in terms of friendliness and speed. Every question has been answered personally and uncomplicatedly so far. So I imagine such a total package for a high-priced product. Thank you for that!

THE BEST FRANKFURTER BRETT. PERIOD.
At home, I have a PHOENIX-S with bamboo endgrain worktop - and have often gathered some head shaking: Why don't I get myself a "real" board, especially since I'm at the source?

I must confess: The decision in favour of the Phoenix-S was a purely aesthetic one.

I know all the Frankfurt planks in detail, and I know that on a functional level, with skilful planning, even the Basic should be sufficient for most cooks. And since I'm not an overly fanatical chef, the "small" Basic and Phoenix-S bracket system is definitely enough for me, especially since I only cook for more than 4 people in a few exceptions.

And the Phoenix-S is functionally just as well thought-out, powerful and smooth-running as the big Phoenix, but without being such a gigantic, space-consuming monster - you can simply move it aside or even put it in the cupboard.
Meanwhile - from my point of view - no other Frankfurt board brings as much compact elegance and beauty of form to the table as the Phoenix-S - and that's why I was so happy like a little child when I was finally able to order my Frankfurt board for my new kitchen in our shop and have been very happy ever since.

Note:
Especially with the Phoenix-S, an over-corner situation in the kitchen is particularly recommended in order to be able to build up a robust working structure:
I always attach an additional deep 1/9 stainless steel GN to my left side for tasting spoons and kitchen utensils and in the front the standard structure of waste & cuttings containers - so you can easily cook for more than 4 people, especially in small kitchens.
Alternatively, you can simply place the same container next to the back of the display.

FAQ

The fact is: All our woods are absolutely suitable for use as cutting boards – from a purely functional point of view there are therefore no significant differences. From our point of view, this makes the choice of wood a purely aesthetic matter and you can simply decide in a pleasant and light-footed manner what suits you best – in our experience this is always the best way to be happy with your products in the long run anyway. (The only limitation: If you own extremely high-quality, not stainless knives (99% of all knives are stainless – if you don’t own stainless knives, you usually know about it), you don’t want to use oak wood, otherwise the black stains typical for oak can occur if the knife accidentally lies on the wood with a moist blade for a long time.)

The logistical processes on a chopping board are surprisingly complex – this can be confirmed by anyone who has ever cooked a little more sophisticated. Every good tool needs care, as does the Frankfurt board. But that’s no reason to panic: Actually it is done with a little wood oil every 2 weeks – but you can also do a little more. HIER is our detailed care instructions.

Cutting boards made of wood or rather of plastic? Of course we have an opinion – or rather a recommendation: HIER is our article on the topic.

We hear this question relatively often: Unlocked brackets seem like a gross error of thought, but there are actually good reasons for it:
A – CLEANING: To clean the board, simply remove the brackets from the board and put them in the dishwasher – job done.
B – FLEXIBILITY: Especially with our "large" boards, the various brackets can be quickly repositioned as required and adapted to the working situation – a locking mechanism would make this very complicated.
C – SAFETY: Children who pull on a bracket from below could pull the entire board (including the knives on it) off the worktop when the handle is locked. If the brackets are not fixed, the worst thing that can happen is to pull them out.
D – It does not matter in everyday life at all. We have never received a customer complaint that the loose brackets are a nuisance in everyday life.

Unfortunately not. Although all external dimensions of the containers are standardised, the internal dimensions – i.e. where the containers rest on the brackets – are not standardised and vary considerably depending on the manufacturer and in some cases do not fit. So that the boards can be used smoothly right from the start, we deliver our board systems only in combination with containers.

You can combine the Phoenix base with different worktops and thus structure the kitchen work even better, e.g. with your own worktop for meat or fish and a worktop for vegetables.

(We've heard of customers who use one board for cooking and one board that is only used when they want to impress their guests - well played.)
