SMALL SERIES FROM THE MANUFACTORY
What looks like a boring plastic frame is probably the most exciting part of the whole Phoenix and a great combination of state-of-the-art plastic technology & solid handwork:
Each frame weighs 5 kg and is hand poured into an open 30-piece mold, which is assembled and disassembled for each cast - creating 3 frames per hour in small-scale manual labor.
In the next step, each frame is matted with glass beads, oiled and polished by hand, before the serial license plate is glued in place and the anti-slip silicone rings are inserted on the underside in the final step.
All in all, it takes around 50 steps to complete a single frame. However, we think it's worth it.

WHICH WOOD IS RIGHT FOR ME?

We have a clear recommendation: in our experience, personal taste is the only important parameter for a long-term positive product relationship, and thus the only question to answer is:
Which wood do you like best? Quite personally and quite deep inside?
(Falling in love is explicitly allowed).

From a purely technical point of view, all wood species in our range are suitable as cutting boards and differ only in the finest nuances of density & hardness - apart from bamboo, which is characterized by far above-average hardness and resistance, but of course does not look as lively as the other woods.

FUNCTIONAL ORNAMENTS

The centering wedges are additionally inserted into the frame and center the worktop on the frame.
The mechanism is simple: The centering wedges form the "positive", the worktops have the corresponding "negative" geometry. This is precisely milled - so that both parts interlock positively using a simple "tongue & groove" mechanism.
Despite the stable hold in this position, the support can be easily lifted upwards at any time - for cleaning or to turn the support around.
Each set of centering corners (4 pcs.) is precision milled from the solid in Offenbach and is packed separately.

EN DETAIL: THE PHOENIX-SERIES

While Basic and Mono still pass for regular cutting boards with a little good will, the Phoenix series differs fundamentally just by its two-part construction alone:

The entire "technology" - i.e. the brackets, centering joints and rubber feet - of the Phoenix is accommodated separately from the actual cutting board in a frame made of solid, hand-cast polyurethane. The cutting board itself only sits on the base, precisely form-fit centered.

This design has significant advantages:

SEPARATION OF FLAVOURS & INGREDIENTS
The support can be easily rotated during cooking with one quick movement. This allows different flavours and foods to be easily separated from each other, e.g. chili & garlic or meat/fish from a vegetarian dish.

EASY CLEANING
The worktop can easily be removed and cleaned separately after and during cooking, while the entire base with the containers simply remains on the table.

MULTIPLE WORKTOPS

The Frankfurt Brett fits perfectly to our outdoor kitchen (consists of a gas grill, a water smoker and an empty wine barrel with the elegant board on top). Here everything can be prepared super, thanks to the many containers nothing stands more in the way, and everything is neat. We like to make burgers and thanks to the many containers the ingredients are ready in the right order and nothing can be forgotten anymore (ok, except for the pickled celery the last time, but that was probably more due to the celery than to the board). We don't want to miss the Frankfurt Brett any more, but since it is a bit too big for our kitchen, we will ask Santa Claus to lay a basic under the tree.

I love my Phoenix from Frankfurter Brett because it’s teaching me chef-like discipline at home.

As a passionate cook I used to find myself doing things in parallel, like chopping garlic while sautéing onions. But preparing ingredients and cooking at the same time gets stressful. My Phoenix reminds me to do mise en place properly. Having all the ingredients cleaned, chopped, whisked, measured and organised, before I begin cooking, has removed the chaos. With “everything in its place” I'm not scrambling like a deranged juggler.

My approach now has structure. With source ingredients in the top gastronorm containers, I move prepared ingredients to the right-hand side or front containers and the waste into another container at the front for composting later on. Having brackets on all sides with different sized containers lets me configure my setup to suit what I’m cooking.

The Phoenix is a permanent fixture in my kitchen. I use it every day and its elegant design makes it a bit of show piece. The oak board is durable and easily maintained or restored with a light sanding and oil. And I love the BBQ Madness Carving Pad. I smoke and cook a lot of meat, so channelling the juice into a container while resting or carving not only avoids a mess, it captures all the liquid for a tasty sauce. The pad is also perfect as mixing station for cocktails.

The Phoenix has become my favorite item in the kitchen. I have set it up so that I can use all 4 sides with the GN trays. So I really have a lot more space! Slicing is fun, easy to do and I cook fresh every day. The only thing you didn't think of was something "To smaller people with small belly, or also big ;-)" Therefore I bought a 2/8 GN container, which was not easy to find. I put it at the front, on the right side and can stand closer to the board. This makes the handling much easier. If you stand further away and are small, it's really tedious. I use it as a "compost bucket", everything really goes in there. The Phoenix is great from the processing and the oak board I feel as a very pleasant worktop. After the oiling it looks always like new and makes immediately still much more fun! I can really recommend it to everyone.

In my kitchen you will find a huge professional cooker hood and a professional sink centre next to a small washbasin with gold-plated corner valves and fittings.
I have purposefully designed the kitchen as the liveliest and loudest room in my entire home, as the focal point of living together - and in the middle of my kitchen the PHOENIX stands on a trolley.
It meets all the demands I have learned to formulate during my career: stable, huge, quick to clean, with a reversible worktop - and it simply looks brutally good.

The fact is: All our woods are absolutely suitable for use as cutting boards – from a purely functional point of view there are therefore no significant differences. From our point of view, this makes the choice of wood a purely aesthetic matter and you can simply decide in a pleasant and light-footed manner what suits you best – in our experience this is always the best way to be happy with your products in the long run anyway. (The only limitation: If you own extremely high-quality, not stainless knives (99% of all knives are stainless – if you don’t own stainless knives, you usually know about it), you don’t want to use oak wood, otherwise the black stains typical for oak can occur if the knife accidentally lies on the wood with a moist blade for a long time.)

We hear this question relatively often: Unlocked brackets seem like a gross error of thought, but there are actually good reasons for it:
A – CLEANING: To clean the board, simply remove the brackets from the board and put them in the dishwasher – job done.
B – FLEXIBILITY: Especially with our "large" boards, the various brackets can be quickly repositioned as required and adapted to the working situation – a locking mechanism would make this very complicated.
C – SAFETY: Children who pull on a bracket from below could pull the entire board (including the knives on it) off the worktop when the handle is locked. If the brackets are not fixed, the worst thing that can happen is to pull them out.
D – It does not matter in everyday life at all. We have never received a customer complaint that the loose brackets are a nuisance in everyday life.

Unfortunately not. Although all external dimensions of the containers are standardised, the internal dimensions – i.e. where the containers rest on the brackets – are not standardised and vary considerably depending on the manufacturer and in some cases do not fit. So that the boards can be used smoothly right from the start, we deliver our board systems only in combination with containers.

The Phoenix is our superlative: It's huge, it's heavy, it's spacious and anything but subtle. And therefore probably the most spectacular piece of equipment you can put in your kitchen.

The work surface is dimensioned so that you have enough space next to a generous work zone to store ingredients, to arrange tools ready to hand and also to garnish plates on the board.

The bracket system is designed for maximum load: Up to 7 working containers can be attached to the front and sides and carry a maximum load of 35kg without reaching any limits, ideal for cooking sessions for 6+ people.

 
EN DETAIL: THE PHOENIX-SERIES

While Basic and Mono still pass for regular cutting boards with a little good will, the Phoenix series differs fundamentally just by its two-part construction alone:

The entire "technology" - i.e. the brackets, centering joints and rubber feet - of the Phoenix is accommodated separately from the actual cutting board in a frame made of solid, hand-cast polyurethane. The cutting board itself only sits on the base, precisely form-fit centered.

This design has significant advantages:

SEPARATION OF FLAVOURS & INGREDIENTS
The support can be easily rotated during cooking with one quick movement. This allows different flavours and foods to be easily separated from each other, e.g. chili & garlic or meat/fish from a vegetarian dish.

EASY CLEANING
The worktop can easily be removed and cleaned separately after and during cooking, while the entire base with the containers simply remains on the table.

MULTIPLE WORKTOPS
You can combine the Phoenix base with different worktops and thus structure the kitchen work even better, e.g. with your own worktop for meat or fish and a worktop for vegetables.

(We've heard of customers who use one board for cooking and one board that is only used when they want to impress their guests - well played.)
