HOHENMOORER / MONO STEEL YVO2

At first glance, the Hohenmoor knives appear coarse and archaic, only at second glance do they reveal the special harmony of form and finely adjusted material contrasts, revealing the mastery of the design.

OF KNIVES & TOOLS

At first glance, the Hohenmoor knives appear coarse and archaic, only at second glance do they reveal the special harmony of form and finely adjusted material contrasts, revealing the mastery of the design.
The characteristic lines with the bevelled tip as a trademark, the elegant interplay of multi-layered blackened steel, smoked bog oak and the small brass buckle - the birth as a tool in the red-hot forge is always visible on the knife.

Even if we are otherwise big fans of simple tools in the kitchen, the Hohenmoor knives have had a firm place in our kitchen for years due to their exceptional product and relationship quality.

We can particularly recommend the combination of a large cooking knife Yvo 1/2 with the small Yvo 0: Prepared in such a fashion, both rapid cutting operations and the most precise operations can be carried out with ease.

Our personal favourite (and a great addition even for more demanding knife collections) is the Yvo 3: based on the classic Chinese universal chef's knives, it is large, heavy and extremely dramatic. With a little practice, however, it is a light-footed and versatile tool, especially for all kinds of vegetables. The high blade has several qualities: On the one hand, it enables extremely precise and smooth blade guidance, on the other hand, sliced material can be easily transported on the blade, and even more powerful work (such as splitting pumpkins) can be done excellently due to its size.

All knives are available either in the regular version in carbon steel or in the more elaborate version as three-layer steel.
Both variants are not stainless and require a little more maintenance than stainless steel knives. But because they are so special, they are happy to accept the somewhat higher maintenance effort and finally take a serious look at the topic of "knife sharpening".

We use an easy-to-clean stainless steel knife in our fast everyday kitchen - but as soon as we cook with more devotion and care, the Hohenmoorers are always used and we are always happy to have the distinctive handle in our hands.
